Saturday: Chili Relleño Casserole with sliced avocado and refried beans.

Sunday: Orzo Shrimp casserole featuring shrimp, feta cheese, spinach and tomato chunks.

Well, technically, Monday the 22nd isn’t a weekend day, but we were on the road on Saturday, so we pushed the dining schedule out by a day.

Sunday: Tex-Mex cheesy enchilada meatballs with pinto beans and Spanish rice.

Monday: Spaghetti and marinara meat sauce with garlic cheese toast.

Saturday: Crazy Yellow Chicken Burritos.

Sunday: Pot Roast and all the trimmings.

Saturday: Pulled Pork Sammiches with bleu cheese coleslaw and kosher dill pickles.

Sunday: Tenderloin Beef Stroganoff

Sunday: Chinese-style lemon chicken breast nuggets over steamed rice.

Saturday: Beef strips and veggies stir fry . . .

Saturday Bonus breakfast – Poached egg on bagel w/asparagus spears . . .

Saturday – pizza with lots of delicious toppings.

Sunday – Country-style pork ribs with applesauce, steamed rice and cheese-topped veggie medley.
