Finally settled on a couple of good meals. Burgers for Saturday and Tuscan-style chicken in the slow cooker for Sunday.

But we did come up with some by the weekend . . .
Saturday: Mozzarella-stuffed meatballs in tomato-pesto sauce with garlic-cheese mashed potatoes and broccolini.
Sunday: Herb-coated roasted pork tenderloin with braised cabbage and acorn squash.
We just got back from our Annual Catalina Island Pilgrimage. Verna whipped up a quick chicken and pasta dinner for us and it sure was good.

We bought a tri-tip but we just had roast last week, so we decided on stuffed pork chops.
Saturday: Stuffed pork loin chops with baby carrots, Brussels sprouts and acorn squash.
Sunday: Lemon Chicken with Fried Rice and a Tsing Tao Beer.

Update: Well, we abandoned both of those in favor of other stuff . . .

Labor Day: BBQ Brats and Dogs, corn on the cob and delicious pasta salad.
