Mothers Day Weekend . . .
We have plenty of frozen chicken breasts on hand.
Saturday – Crazy Yellow Chicken fajitas with red rice, pinto beans and corn on the cob.

Sunday – Grilled chicken sandwiches with broccoli slaw and baked potato sticks.

Spring weekend . . .
Stuffed pork loin chops with baked acorn squash and cheese-topped broccoli:

BBQ Rib Eye steaks smothered in sauteed mushrooms, Danish-style stuffed baked potatoes and steamed broccoli.

Menu undecided at this point. However, on Saturday (4/26), we are going to the recycle center, the Botanic Gardens and then to shop at Smart and Final where frozen chicken breasts are needed.
Saturday: Spaghetti and Meatballs with fresh spinach salad.

Sunday: Hula Chicken with roasted acorn squash and blended rice.

Probably a chicken weekend, but that could change.
Saturday: Chicken and potato with verde sauce empanadas served with pinto beans.

Sunday: Tenderloin steak with macaroni/cheese, asparagus and braised Brussels sprouts.

Maybe something Chinese to go with the Tsingtao Beer I just bought?
Saturday: BBQ baby back ribs with grilled pineapple, roasted corn and grilled asparagus. Steamed broccoli and cauliflower not shown.

Sunday: Sweet and sour pork with rice, vegetables, bok choi and cabbage.

Italian-style turkey sausage and ground lean turkey are in the freezer.
Saturday update: Stuffed pasta shells and salad with Italian Balsamic dressing.

Sunday update: Honey-mustard glazed BBQ pork tenderloin, Au Gratin potatoes, steamed fresh broccoli and braised Savoy cabbage.

Pork shoulder and turkey sausage in the inventory.
Saturday: Pulled Pork, Cole slaw with roasted pineapple ring and pickle.

Sunday: Pork and spinach enchiladas with Verde sauce and crumbled cheese.
